Executive Chef Craig Mombert’ s successful track record in the foodservice industry is attributed to his passion for never settling and his ability to build a robust, diverse team of individuals. These tireless contributions have elevated service and expectations for a variety of food service venues across the country.
Craig’s career began after graduating Alfred State College at Wellsville with an Associates Degree, he enlisted in the United States Army as a cook and stationed in Karlsruhe Germany for two years. During his enlistment, Craig was awarded two Army Achievement Medals for excellence in the culinary arts at battalion and brigade level.
Craig attended the Culinary Institute of America at Hyde Park where he earned second Associates Degree in Culinary Arts and Sciences. After graduation, Craig worked in a variety of food service operations where he honed his culinary and management skills. From Restaurant Sous Chef at Trump Plaza Hotel and Casino to Catering Chef at Hyatt UN Plaza in New York City, to Sous Chef at Cornell University Dining and Catering, to Restaurant Chef at Wintergreen Resort in Wintergreen, Virginia. Craig’s diverse background in fine dining and catering gave him tools to succeed at Davidson College where he currently is the Executive Chef since 2002.
During his tenure at Davidson College Craig received his bachelor’s degree in culinary arts and Management from the New England Culinary Institute.
Craig has been able to transform the dining experience of the Davidson College community by offering diverse menu offerings that include current food trends, International flavors, faith base meals and comfort foods. Craig’s staff is trained in dealing with food allergies by giving our customers peace of mind by presenting for their review recipes and ingredient lists.
Craig worked with current dining service management in our 2005 renovation project which changed entirely the way dining services would be viewed. By working with our design team, we were able to purchase state of the art equipment to produce a variety of foods using less equipment and cutting down on labor.
Craig is an original member of Premier Culinary Committee, Premier Inc. Group Purchasing Organization (GPO). Craig’s affiliation with Premier has inspired food vendors to review their practices to become more sustainable in the industry.
Craig also worked as a NASCAR official at Concord Speedway in Concord NC and Scoring and Timing official at Charlotte Motor Speedway, The Dirt Track at Charlotte and Z-Max Dragway.
Craig is currently married to his wife Caroline and has 2 daughters Alexandra 10 and Brenna 6. They live in North Carolina. In his spare time, he reads, enjoys traveling, attending concerts, spinning and biking and running 5k’s. Craig and his family completed a 5k event to stop human trafficking. Craig and Alexandra completed another 5k through the local YMCA.
